This marvellous, rich-tasting comb honey comes from a new joint venture by Tay Bees and Honey and Royal Deeside Honey and Bees. Gavin and Sarah share an apiary near Ballater in Royal Deeside where, in late summer, the bees bring in bell heather honey with a little of regular ling honey and other flowers in the mix.
This chewy comb honey has an amazing flavour and we are really proud to be bringing you this king of honeys.
Bell heather has deep purple, larger flowers compared to the lilac regular heather and flowers earlier, in July but continues on until autumn at some sites. Conditions have to be right for this honey so we take hives to the heather early and risk the lack of a decent bell heather crop more years than not.
We enjoy it spread on warm toast or on top of hot porridge, wax and all! This is also an ideal honey to have with cheese, on a traditional cheeseboard where it can be sliced thinly with a sharp knife, or can just be eaten as it is.
