This site is in a country estate looking down the the River Earn in Perthshire. The owners grow an amazing number of ornamental plants in their grounds, their drives are lined with lime trees and there is clover-rich pasture and riverside plants within flying distance. This wonderful mix gives a blossom honey with a glorious flavour and sometimes, in a wet summer, can yield a pure sample of lime. This particular batch has the flavour of lime in it but a rich variety of other plants in there too. This is one site where a difficult decision has to made in July. Should the hives stay for the chance of some lime or should I run for the hills in the hope of getting bell heather honey, another fickle honey crop.
This batch had the lucky characteristic of a fine-grained natural soft-set meaning that only placing the bucket in a warm room was required to get it moving enough to pour into jars.
