This rich late summer honey comes from the hives set in the grounds of an old farmstead undergoing renovation near Trochry in the hills above Dunkeld. The hives were set there for heather but the bees, finding pastures with clover and other summer flowers and lime trees in the nearest hamlet, had other ideas. They would first of all fill a few boxes with a tasty mix of late summer flowers!
From its flavour, the experienced honey taster may be able to pick out the tang of the lime trees, the richness of the clover and other summer pasture flowers and the warm deep notes of the ling heather.
