On the fertile land around Bridge of Earn in Perthshire, a lovely conservation-minded farmer invited me in to share the forage available on and around his farm. This delicious summer honey was brought in by the bees in July when the local flowers included clover, Phacelia, willowherb, bramble and lime. Lime is a honey the bees will collect in a wet season when there are still, humid days during the short flowering period.
I’m particularly proud of the chewing on the corner of one of the hives here. Could only be a beaver! (Must get a photo … ) However I have to say the farmer is less pleased to have beavers on his farm. It is easy to understand his views. They are burrowing into flood defences and taking down the trees lining the waterways.
